We offer Cheddar Cheese from three different countries to go with our  
Cabernet Sauvignons
 From England, the home of the original Cheddar, we offer a  
Traditional Farmhouse Cheese aged 12 months.
This type of cheese-making spread through the old British Empire, and  
we offer two “colonial copies”:
 From New Zealand we offer a Grass-fed Sharp Cheddar aged over 6 months
 From Canada we offer an Extra Sharp Cheddar aged 24 months

This week we bring you some modestly-priced wines that offer gobs of  
flavor for your buck – and then offer the chance to taste an  
expensive California Cabernet

1. We start on the CALIFORNIA NORTH COAST with the RAY’S STATION  
2006.  A few years ago we carried this producer’s wine, and this  
vintage is as good as the earlier one.  It offers lots of berry  
fruit, a touch of oak, and a long finish shows a little spiciness -  
$13.50

2. It is rare I taste an AUSTRALIAN CABERNET SAUVIGNON that I want to  
sell in the shop.  Most of the lower-priced ones taste too much like  
SHIRAZ.  The RED KNOT 2007 from SOUTH AUSTRALIA, while showing its  
Aussie upbringing, actually tastes like CABERNET.  Very aromatic, the  
wine offers lots of blackberry fruit framed by modest oak (a mix of  
French and American) - $11.00

3. This next wine has been popular for a few weeks but we have not  
had it open.  The IRONY 2005 NAPA VALLEY CANERNET SAUVIGNON is the  
second vintage of this wine to be available in Oregon, and the fourth  
made by LIFE’S STRANGE TWISTS WINE COMPANY.  This is a bold and rich  
wine showing black current aromas and flavors.  The oak is relatively  
restrained and the finish shows modest tannins - $14.25

4. We stay in the NAPA VALLEY for our next wine, the 2006 EDUCATED  
GUESS, the second vintage produced by ROOTS RUN DEEP WINERY.  As I  
said when we offered the 2005, I’m normally put off by “cutesy” or  
“non-traditional” labels, but this label seemed acceptable – maybe it  
is the engineer in me.   On the winery website they say “The name  
‘Educated Guess’ came about during a lively, second bottle of wine  
conversation about winemaking styles, vineyard sites, and the  
progressive escalation of wine prices without comparable increases in  
quality.  The discussion then proceeded to the “art vs. science”  
aspect of winemaking and after a few more glasses of wine “Educated  
Guess” was born!!!”  The main source of fruit for this wine is the  
famous BECKSTOFFER VINEYARD on the RUTHERFORD BENCH which provides  
the approximate 85% CABERNET SAUVIGNON in the wine.  The balance of  
this wine is MERLOT, PETIT VERDOT and MALBEC from other Napa  
vineyards.  The wine offers a lovely combination of typical west  
coast style with some Bordeaux elements.  Who would have thought you  
could buy a Beckstoffer Cabernet for less than $20 - $19.25

For this week’s PREMIUM POUR we stay in the NAPA VALLEY and offer a  
fairly expensive wine:

When I tasted the MARSTON FAMILY VINEYARD 2005 CABERNET SAUVIGNON  
SPRING MOUNTAIN DISTRICT at a trade tasting I thought I’d finally  
found a triple-digit priced California wine that was worth the  
price.  I agree with Robert Parker about this wine – this 2005 is a  
beauty.  He then said “…a beautiful nose of licorice, spring flowers,  
cassis, and hints of blueberry and chocolate.  It is elegant, full- 
bodied, refreshing, and intense. Drink 2007-2022. 94 points.”  From a  
vineyard planted in the 1970s on Spring Mountain, this is a lovely  
wine, and by California pricing, worth the money.  Forget Silver Oak,  
Caymus, etc! - $105.00

SORIN 2006 CUVÉE TRADITION – this red wine from a BANDOL producer  
carries a CÔTES de PROVENCE appellation as some of the fruit comes  
from outside the BANDOL boundaries.  This is a blend of GRENACHE,  
MOURVÈDRE and SYRAH and offers earthy, black fruit – ideal to go with  
hearty winter stews - $10.00
