This week we offer a selection of North American Cheddar cheeses to  
go with your Cabernet Sauvignon.

This week we offer a selection of Cabernet Sauvignon from the Napa  
Valley, Oregon and Washington.

1. We start with our neighbors to the north, WASHINGTON, and DUSTED  
VALLEY VINTNERS of WALLA WALLA.  Their 2004 STOMP CABERNET SAUVIGNON  
COLUMBIA VALLEY is a discontinued label and hence is great value.  It  
offers lots of rich cassis fruit, some noticeable oak, and a spicy  
finish - $12.50

2. Going south to CALIFORNIA we offer a special bottling from  
MOUNTAIN VIEW VINEYARDS.  This producer is better known for their  
“California/Central Coast Series” of wines (we have the 2005 Central  
Coast Cabernet at $9.00), but from the 2005 vintage they got some  
fruit from SPRING MOUNTAIN in the NAPA VALLEY.  This is “high  
altitude” fruit, and the wine shows the power coupled with elegance  
typical of wines from mountain fruit - $16.00

3. We stay in the NAPA VALLEY for our next wine.  I’m normally put  
off by “cutesy” or “non-traditional” labels, but ROOTS RUN DEEP  
WINERY’S 2005 EDUCATED GUESS label seemed acceptable – maybe it is  
the engineer in me.   On the winery website they say “The name  
‘Educated Guess’ came about during a lively, second bottle of wine  
conversation about winemaking styles, vineyard sites, and the  
progressive escalation of wine prices without comparable increases in  
quality.  The discussion then proceeded to the “art vs. science”  
aspect of winemaking and after a few more glasses of wine…“Educated  
Guess” was born!!!”  The main source of fruit for this wine is the  
famous BECKSTOFFER VINEYARD on the RUTHERFORD BENCH which provides  
the 85% CABERNET SAUVIGNON in the wine.  The balance of this wine is  
MERLOT, PETIT VERDOT and MALBEC from other Napa vineyards.  The wine  
offers a lovely combination of typical west coast style with some  
Bordeaux elements.  Who would have thought you could buy a  
Beckstoffer Cabernet for less than $20 - $19.25

4. Our final NAPA wine is from NAPA CELLARS.  Their 2005 CABERNET  
SAUVIGNON is classic NAPA Cabernet – gobs of ripe cassis fruit, some  
oak, a touch of spice and a long finish.  Unfortunately the  
distributor tasted me on the 2005 but delivered the 2006.  Let us  
hope the 2006 is as good!  On deal from the distributor this month -  
$22.50

This week’s PREMIUM POUR:

Our PREMIUM POUR comes from OREGON, in fact from the OREGON piece of  
the WALLA WALLA AVA.  ZERBA CELLARS are based in MILTON-FREEWATER,  
and for a few years the wines carried a Columbia Valley designation  
as they used purchased fruit from outside of WALLA WALLA.  The 2005  
CABERNET SAUVIGNON is a blend of 87% CABERBNET SAUVIGNON, 10% MERLOT  
and 3% CABERNET FRANC from several vineyards in Milton-Freewater.   
The wine was aged in a mix of French and American oak for about 18  
months.  While having lots of upfront fruit typical of the area  
(cassis and black cherry), the wine is complex and has great  
balance.  You will find notes of licorice, fennel and chocolate on  
the palate and long finish - $30.00

As usual we will have a couple of wines open including this week’s  
Matt Kramer “rave” red:

With the forecast temperature, we thought a refreshing white would be  
ideal.  What could be better than a VIHNO VERDE from PORTUGAL?  The  
QUINTA da AVELEDA is a 2006 but is still fresh and lively.  It has  
lovely fruit, but also has the classic touch of spritz - $9.50

DOMAINE BRUSSET 2006 CÔTES DU VENTOUX “LES BOUDALLES” is a blend of  
GRENACHE (60 percent), MOURVÈDRE (15 percent), CARIGNAN (15 percent)  
and CLAIRETTE (10 percent) from a 12.3-acre vineyard near the town of  
Carpentras.  Matt Kramer says “It delivers an unusual depth of flavor  
for this appellation, with raspberry and red cherry notes and some  
real backbone thanks to the employment of Mourvèdre, a grape not  
commonly used in Côtes du Ventoux because it’s low yielding” - $10.00
