CHEESE PLATE
This week we offer a variety of cheeses to go with the variety of
wines we are pouring. All these cheeses come from the new Whole
Paycheck which recently opened on NW Cornell Road at 194th.

CHEESE SAMPLER PLATE $5.00
South America is better known for value-priced wines, but is now
producing some excellent, higher-priced wines. This week we offer
great value wines in the basic flight and a spectacular wine as the
Premium Pour.
1. We start in CHILE and the MAIPO VALLEY. SANTA EMA is a producer
of many excellent value wines and the 2007 ROSADO is a lovely dry
Rosé. It is a blend of 60% CABERNET SAUVIGNON and 40% SYRAH. A
medium-weight rosé, it offers lots of wild cherry and raspberry
fruit, and a long, dry finish. Spectacular value - $11.25
2. Moving east to ARGENTINA, we offer the new vintage of our best-
selling MALBEC. ALTOS LAS HORMIGAS is a consistent producer, year-
in, year-out, and the 2007 from MENDOZA is as good as ever.
Regularly rated at about 90 points, the price is reasonable as the
wine is a direct import by Portland’s Domaine Selections - $11.00
3. Going back to CHILE we will taste a new product on the Oregon
market. When I first tasted the products of VIÑA HARAS de PIRQUE I
thought we have another good quality Chilean producer. The regular
CABERNET SAUVIGNON is good, but the 2005 CHARACTER is wonderful.
Almost Bordeaux in character, it offers lots of cassis fruit, subtle
oak, great balance and length - $20.00
4. Back again to ARGENTINA (OK I’m trying to get you to use all your
“Frequent Flyer”: miles!) When I traveled to Buenos Aires in the
1970s NORTON was an “up-market” wine. However they lost their way in
the modernization of the industry during the 1980s, but now have
bounced-back to the forefront of quality. The 2005 PRIVADA is a
blend of 40% MALBEC, 30% MERLOT, and 30% CABERNET SAUVIGNON sourced
from several Mendoza appellations with vine age ranging from 50-80
years and modest yields of 1.6 tons per acre. The wine was aged for
16 months in new French oak. The Wine Advocate: “Purple-colored, it
has a complex bouquet of pain grille, pencil lead, clove, black
currant and black cherry. This leads to a medium to full-bodied wine
with good grip, ripe fruit, and well-integrated, soft tannins. The
finish is long and pure. This tasty blend will evolve for several
years but can be enjoyed now and over the next 10+ years” - $21.75

This week’s PREMIUM POUR:
BODEGAS ACHAVAL-FERRER was founded in 1998 and is already thought of
as one of Argentina’s benchmark wineries. Many of their wines are
north of $100, and the QUIMERA is their “entry-level” Bordeaux
blend. The 2005 is a blend of 37% MALBEC, 28% MERLOT, 25% CABERNET
SAUVIGNON and 10% CABERNET FRANC. The wine was aged in French oak of
which 40% of the barrels were new. This wine was rated 93 in the
Wine Spectator and 92+ in The Wine Advocate. The nose offers black
currant, olives and licorice, and the wine is beautifully balanced,
offering intensity and length. The Wine Advocate said “…it could
easily pass for a classified growth St.-Julien” - $45.00
