We will offer a Cheddar selection – this is the most popular with  
Cabernet-based wines.

With this tasting we offer wines based on Cabernet Sauvignon from  
several wine regions.

1. We start in CALIFORNIA and a famous winery, ROBERT MONDAVI.   
Unfortunately the family now have nothing to do with the winery that  
is now owned by Constellation Brands (it is amazing as in the early  
1980s Pauline and I knew this company as the Canandaigua Wine Company  
who made awful wines!)  The 2005 VINETTA is a blend of all five  
Bordeaux varietals, 68% CABERNET SAUVIGNON, 14% MERLOT, 11% PETIT  
VERDOT, 5% MALBEC and 2% CABERNET FRANC.  We have sold a lot of this  
wine, so I thought it time for our Friday regulars to taste a bargain  
- $10.00

2. Next up is INDIA, what? I can hear you say!  Well, when the  
importer was here last spring, the Indian wines were popular.  We now  
have the next vintages.  The GROVER VINEYARDS 2004 LA RÉSERVE is a  
blend of 65% CABERNET SAUVIGNON and 35% SHIRAZ.  It was stainless  
steel fermented and then aged in French oak.  The consulting  
enologist is the infamous MICHEL ROLLAND.  For those of you that have  
not tried this wine, I think it will be a pleasant surprise - $16.50  
(we also have an un-oaked 2005 at $13.00 which seems to go well with  
spicy Indian food – this is the wine we buy when we eat at the CURRY  
LEAF)

3. We now come to a WASHINGTON/OREGON “joint venture”.  CANA’S FEAST   
(aka CUNEO CELLARS) has now named their TWO RIVERS bottling as BRICCO  
TWO RIVERS.  This wine, at 35% CABERNET SAUVIGNON, does not meet my  
requirement of at least 50% CABERNRT SAUVIGNON, but adding 26%  
CABERNET FRANC makes the grade!  This wine also has some MERLOT and  
PETIT VERDOT, and it shows the benefit of mixing the lush fruit from  
the ROGUE RIVER with the more structured elements of the COLUMBIA  
VALLEY fruit - $20.00

4. ROXYANNE 2005 CLARET is another wine that is not at least 50%  
CABERNET SAUVIGNON, but with 23% CABERNET FRANC it is over 60%  
CABERNET, the rest being MERLOT.  This winery in OREGON’S ROGUE  
VALLEY is making spectacular wines – when we poured the SYRAH it sold- 
out.  As a Bordeaux fan (the real Claret) I really like this wine -  
$25.00

For this week’s PREMIUM POUR we go to WALLA WALLA:

SAVIAH CELLARS is one of my favorite producers from WALLA WALLA as  
their wines are not “over the top” as I believe certain Walla Walla  
wines are.  The 2005 UNE VALLÉE is a blend of 62% CABERNET SAUVIGNON,  
31% MERLOT and 7% MERLOT and while I’d never consider it a BORDEAUX,  
it has many of Bordeaux elements wrapped up in a very west-coast  
cloak of lush fruit and oak - $33.50

information is based on verbal information from distributors, and  
actual wine prices will depend on the price invoiced at delivery to  
Cornell Wine Company.

We are planning to have open two bargain CALIFORNIA WINES, a CABERNET  
SAUVIGNON and a CHARDONNAY from an operation called COASTAL VINES.   
These wines are meant to be “restaurant only” so they can pour it at  
$6.00/glass.  Our price is $6.00/bottle ($5.00/bottle by the case).
