This week we offer a selection of Cow’s Milk Cheddar cheese that we
have not used before:

CHEESE PLATE $3.00
Our Cabernet offering is from well-known producers and some little
known producers. The wines come from Washington and California.
1. We start in CALIFORNIA with a long-time producer, EDNA VALLEY.
Their 2005 CABERNET SAUVIGNON carries a PASO ROBLES AVA. While I
tend to think Zinfandel when I think Paso Robles, this Cabernet is
very elegant and balanced. It is not “flashy” in any way, and at the
moment would be better with food. It offers superb value to go with
your steak over the weekend - $13.50
2. SILVER PALM is a new producer to me, and is a so-called
“restaurant-only package” aimed at the $10/glass price point – and
may be picking-up on Silver Oak coattails! The winery is in SANTA
ROSA, and the fruit for the 2005 comes from NORTH COAST vineyards.
The wine is a blend of 82% CABERNET SAUVIGNON, 10% MERLOT and small
amounts of SYRAH and PETITE SIRAH. The nose offers cassis, fennel
and touches of cedar, and the palate offers a dusty currant fruit
with some spice, and almost what seems to be a Cabernet Franc
influence (although there is none in the blend) - $15.00
3. We now move north to our neighbors in WASHINGTON. WINES of
SUBSTANCE is a new producer from WALLA WALLA and the labels play on
the Periodic Table of Elements – the Merlot is Me, the Cabernet
Sauvignon is Cs, the Malbec is Mb, etc. We offer the 2006 Cs which
carries a COLUMBIA VALLEY AVA. WINES of SUBSTANCE is a project of
WALLA WALLA’s GRAMERCY CELLARS. The wine is a pure example of
CABERNET SAUVIGNON, offering cassis, blackberry, olive, cedar, pencil
box aromas and flavors. This is a wonderful complex wine at a modest
cost - $18.50
4. The last wine is “An oldie but a goodie” from BERINGER. Their
2005 KNIGHTS VALLEY CABERNET SAUVIGNON is a classic. BERINGER were
the first big vine planters in this valley 17 miles northwest of the
NAPA VALLEY winery, and the area now has it own AVA. The wine spent
16 months in Nevers Oak (30% new) and exhibits bright black cherry
fruit and toasty oak, vanilla, cedar and smoky aromas. The palate
offers zesty and rich black fruit supported by nice bright acidity
and ripe tannins. Small amounts of CABERNET FRANC and PETITE SIRAH
were added for additional complexity - $22.50

This week’s PREMIUM POUR:
BEAU VIGNE is another new producer for me and their 2005 “JULIET”
NAPA VALLEY CABERNET SAUVIGNON was an eye opener. I tend to agree
with Robert Parker’s comments: “A fabulous Cabernet from a winery I
need to spend more time checking out…quite powerful, rich, but at the
same time elegant, as one would expect from Stags Leap [district]…”
This wine is 96% CABERNET SAUVIGNON, 2% PETIT VERDOT and 2% MALBEC -
$49.75

actual wine prices will depend on the price invoiced at delivery to
Cornell Wine Company.

As usual we will have a couple of interesting wines open.
Provisional choices are:
CASALONE 2006 CORTESE di PIEMONTE – if this wine said GAVI on the
label, it would be much more expensive. It offers lovely fruit with
a touch of almond on the finish, and has a little spritz which makes
the wine very lively - $12.00
A $9.00 PINOT NOIR? – at least I hope it has not gone up with this
new delivery! Le GRAND PINOT NOIR 2005 VDP d’OC from the South of
France smells like PINOT NOIR, and tastes like PINOT NOIR – you
cannot ask for much more at this price! (note: we are also getting
more of the $12 Italian Pinot Noir that was a big hit at our last
Pinot Noir tasting).
