CHEESE PLATES
This week we go back to our favorite web site in New York to choose  
cheese to go with Pinot Noir.  The information below comes from

Kirkham’s Lancashire                   		 Cow’s  
Milk                                    England
This is one of the great English cheeses (this is hard for a  
Yorkshireman to say!).  It perfectly epitomizes the “butter crumble”  
texture so characteristic of British cheeses.  Mrs. Kirkham - the  
legendary Lancashire cheesemaker - rubs her beautiful, cloth-wrapped  
wheels of raw cow’s milk with her farmhouse butter, enriching the  
taste and protecting them from unwanted molds.  Aged for 5 - 8  
months, Lancashire has a delicate, lemony flavor and a long-lasting  
mellow tang.
Vacherin Fribourgeois                         	Cow’s  
Milk                                    Switzerland
Originally from the Fribourg canton, this raw milk cheese is now made  
throughout the Valais region.  The better ones are made in mountain  
chalets, and in its home area the cheese is used as a table cheese  
and also used in fondue when more flavor is required than Gruyère can  
supply.
Zamborano                                     		Sheep’s  
Milk                         		Spain
Zamorano is a hard sheep’s milk cheese, noticeably nuttier and richer  
than its Spanish cousin, Manchego.  The nomadic shepherding families  
of Castille-Léon have been hand-crafting Zamorano for centuries.   
Zamorano has a sharp, moderately gamey, sheep’s milk flavored bite  
and texture that melts in the mouth.
All these cheeses are available at Whole Paycheck.

With Oregon Pinot Noir prices going through the roof, we thought it  
was time to look at lesser-priced Pinot Noirs from Oregon and  
elsewhere.  This week I’m not going to bore you with my tasting  
notes, but leave it to you to decide if these wines are good value or  
great value.  We offer a flight and two extra pours.

You may want to start with this extra pour:

ARIA PINOT NOIR BRUT ROSÉ - $10.00
We offer this sparkling Pinot Noir from SPAIN for $2.00/4 ounce glass

Taste what the Swiss are doing in the UMPQUA VALLEY.

2. SASS 2006 WILLAMETTE VALLEY PINOT NOIR - $16.00
Jerry Sass has been making good-value wines for years.

3. LA DOLCE VITA 2005 WILLAMETTE VALLEY PINOT NOIR - $16.00
The best yet from LDV, and Brent has a reserve to follow.

4. TAMAR RIDGE 2006 DEVIL’S CORNER PINOT NOIR - $15.00
Taste what they are doing “down-under” on the island of TASMANIA.

5. LOUIS LATOUR 2005 MARSANNAY - $17.75
In 2005, on the CÔTES de NUITS, if you did not make good wine, get  
another “day job”.

BRANDBORG 2004 NORTHERN REACH PINOT NOIR - $20.00
 From the UMPQUA VALLEY, a wine to blow away much of the Willamette  
Valley when it comes to value.

As usual, we will have a couple of interesting wines open.   
Provisional choices are:

SIGALAS 2005 SANTORINI WHITE – as the weather is forecast to be warm  
and dry this weekend, we will open this gem from the Greek island of  
Santorini.  The major white grape on Santorini is ASSYRTIKO, but  
unfortunately wines from this grape are usually now north of $20.   
Sigalas has blended 70% ASSYRTIKO with 30% ATHIRI to create a lovely  
lower-priced white.  On Santorini this other grape is considered a  
“lesser” varietal, but it is the mainstay of some lovely whites from  
the island of Rhodes.  Try this wine with fish or white meat with  
light sauces - $16.50

VESEVO 2004 BENEVENTANO AGLIANICO – this wine comes from the volcanic  
soils near Mount Vesuvio in Campania.  The grape, AGLIANICO, is used  
in the famous TAURASI wines.  While not as complex as those wines, at  
least this wine is much more approachable at a younger age. - $14.50
