THIS WEEK

We are continuing our BEAUJOLAIS SALE – buy any three bottles of in- 
stock wines and receive a 15% discount.  This applies to Nouveau,  
Beaujolais, Beaujolais-Villages and the five Beaujolais Crus we have  
in stock, and also to our Beaujolais Blanc.  On Saturday we had the  
2006 CHIROUBLES open and sold all we had.  Of the Crus we still have  
SAINT AMOUR, FLEURIE, CHENAS and three different MORGONS available.

EXTENDED HOURS – on Tuesday we will stay open until 8:00PM to  
accommodate any last-minute Thanksgiving purchases.  Wednesday we  
will close as normal at 7:00PM.

OREGON WINE SALE – this coming FRIDAY and SATURDAY we will be  
offering our annual Oregon Wine Sale.  SAVE MONEY AND REDUCE GLOBAL  
WARMING, visit Cornell Wine Company instead of the wineries to buy  
your wine!  On November 23 and 24 we will offer a 15% discount on all  
in-stock Oregon wines except the just released Thomas Pinot Noir.

RED BORDEAUX

CHEESE PLATES
To go with these Bordeaux wines we offer a selection of cheese.

As a Yorkshireman, I believe this cheese (of Wallace & Grommet fame)  
is the best in the world.  However I’ve not tasted one from this  
producer.  My favorite cheese web site recommends Wensleydale to  
accompany Bordeaux.

This is maple-smoked, and so this should give nice complexity to what  
can be a rather mild Cheddar.Fiscalini Farmstead Cabernet

This is a new cheese to me and it is currently available at local  
QFCs.  The basic Cheddar is soaked in Cabernet Sauvignon.

Can good old west coast cheese compete?

As has become our tradition on the day after Thanksgiving, we will  
taste Bordeaux.  The original concept was to pour something different  
from Oregon wines on this big “wine touring” weekend.  Of course, we  
now have many “Bordeaux blends” coming from Southern Oregon, but that  
area is not an afternoon drive from Portland!

This week’s BORDEAUX selection - our last Bordeaux tasting  
concentrated on the great 2005 vintage - this time we will also pour  
wines from 2003 and 2004 that were both good vintages.

1. We start with a wine that was a big hit when it was released about  
a year ago, and the local distributor has just obtained more.  The  
CHÂTEAU TOUR SAINT-GEORGES 2005 just carries a basic BORDEAUX  
appellation.  I do not know where this producer is in Bordeaux, but  
to me it seems as though it is a CABERNET SAUVIGNON, MERLOT and  
CABERNET FRANC blend.  It is not a big wine, but is complex for its  
price and very food-friendly.  A bargain - $9.50

2. Now we move to the 2004 vintage and ROC de JEAN LYS.  Despite the  
very modern label, this is classic BORDEAUX SUPÉRIEUR!  The fruit  
comes from a limestone plateau at ENTRE-DEUX-MERS’ CHÂTEAU ROQUES de  
JEANLICE, and the wine is a blend of 70% MERLOT and 30% CABERNET  
FRANC.  It tastes like a good ST.-ÉMILION and it is ready to drink  
now.  This lovely wine is an exclusive import of Bordeaux Wine  
Locators of Tumwater who are represented in Oregon by Galaxy Wine  
Company. - $15.50

3. Next up – “an oldie but a goodie!” CHÂTEAU RECOUGNE has been very  
popular over several vintages and recently the distributor was  
offered more of the 2003 at the price the wine was in 2005.  The wine  
carries a BORDEAUX SUPÉRIEUR appellation and the property is located  
between the appellations of FRONSAC and LALANDE-de-POMEROL.  Another  
blend of MERLOT and CABERNET FRANC, the wine’s aromas seem more Médoc- 
like offering scents of cedar, cassis and smoke.  The palate shows  
the fruit you would expect from the Merlot, and the finish has ripe  
tannins, typical of a wine from the hot 2003 vintage.  The wine shows  
well now, but will continue to evolve for 2-3 years - $13.00

4. And now an encore performance, CHÂTEAU PUY ST. GEORGES 2005. This  
was the star of our 2005 tasting last March, and I thought it would  
be interesting to see how the wine is developing.  The property is in  
the satellite appellation of ST.-ÉMILION called ST. GEORGES ST.  
ÉMILION.  Typical of the area the wine is predominantly MERLOT with  
some CABERNET FRANC and a touch of CABERNET SAUVIGNON.  With its  
lovely nose, ripe fruit on the palate, and long finish, I think this  
is one of the best quality-for-the price 2005s for drinking today and  
over the next few years.  - $20.00

For this week’s PREMIUM POUR we offer a 2005 SAINT-ÉMILION GRAND CRU:

I’ve just realized this tasting is somewhat weighted towards Merlot- 
based wines – it must be because they taste so good when young.   
CHÂTEAU BOUTISSE was purchased by the Milhade family (owners of  
several properties including Recougne) in 1996, and they consider it  
their flagship estate and have made large investments in the  
vineyards and cellar to improve wine quality.  The Château’s web site  
is confusing.  It states the vineyards are 70% MERLOT and 30%  
CABERNET FRANC.  However, the tech sheet on the 2005 vintage says the  
wine is 88% MERLOT, 11% CABERNET SAUVIGNON and 1% CABERNET FRANC!  An  
older reference book I have says the property’s vineyards are planted  
to all three varietals.  Anyway, as the wine tastes good, who cares!   
At this young age, the nose offers complex aromas of cassis, cloves,  
mocha and smoky oak (40% new barrels).  The palate is substantial  
with a velvety texture followed by noticeable tannins.  While this  
wine would be a good pairing now with red meat and game, it will  
certainly benefit from a time in a cellar - $33.00 (current stock  
only, any additional bottles will be $36.00)
