WEST COAST CABERNET SAUVIGNON

CHEESE PLATE
Our cheese plate offers a selection of Cheddars from three different  
countries.  These cheeses are relatively inexpensive, but match well  
with Cabernet Sauvignon.  We will have Cheddars from:
New Zealand - a cheese from grass-fed cows with no BST
New York - a cheese from a company, McCadam Cheese. founded in 1876
Ireland - our customers' most popular Cheddar, Dubliner
The first few plates will also get some Jarlsberg
CHEESE SAMPLER PLATE COST $2.00
1. We start in CALIFORNIA and SANTA BARBARA COUNTY with AVILA 2004  
CABERNET SAUVIGNON.  Avila’s wines are made in an easy-drinking style  
and several of them have been successful in the shop.  This Cabernet  
is in the company’s modus operandi, but is much more complex than the  
price would suggest - $10.00

2. We stay in CALIFORNIA for our next wine.  I never associate LODI  
with decent CABERNET SAUVIGNON, but the 337 CELLARS 2004 changed my  
mind.  This wine is named after the French Cabernet Sauvignon 337  
clone and is one big mouthful, but with good balance - $13.00
3. We now go north to WASHINGTON and the doyen of Washington Cabernet  
producers, WALLA WALLA’s RICK SMALL of WOODWARD CANYON.  No, you are  
not going to taste his main, expensive, wines, but he has a wonderful  
“second label” NELMS ROAD.  The 2005 COLUMBIA VALLEY CABERNET  
SAUVIGNON is very fruit forward for a Rick Small Cabernet, but is a  
more complex and better wine than the slightly disappointing 2004  -  
$20.00

4. The final wine of the flight is from OREGON’s WALLA WALLA  
producer, ZERBA CELLARS.  Their 2004 CABERNET SAUVIGNON carries a  
COLUMBIA VALLEY designation as much of the estate fruit suffered from  
the area’s frost problem.  I thought this wonderful wine was out of  
stock, but managed to get a few bottles.  This wine has won several  
gold, platinum, and double-platinum awards.  Get some while it is  
still available; it is a bargain by Walla Walla price standards - $30.00

For our Premium Pour we go back to CALIFORNIA:

JOSEPH PHELPS has been producing finely crafted NAPA VALLEY CABERNET  
SAUVIGNON for many years.  INSIGNIA is their top wine at over $150/ 
bottle, but you can sample the quality at a much lower price through  
their NAPA VALLEY CABERNET SAUVIGNON.  The 2004 contains 14% MERLOT  
and was aged in a mix of French and American oak (approximately 50%  
new).  Because of the ripeness of the vintage, the wine has high  
concentration and lusciousness.  The palate is a great blend of  
cassis and other dark fruit together with oak and spice.  It is much  
more forward than the 2003 - $55.00  However, THIS FRIDAY ONLY we  
offer the wine at $49.00 to match the price of the few bottles we  
have of the 2003.

As usual we will have a couple of wines open for free tasting.   
Included in the provisional selections is:

 From the LANGUDOC we offer a wonderful bargain SYRAH.  CHÂTEAU  
CAMPLAZENS is owned by a British couple, Peter and Susan Close.   
Their 2005 SYRAH VDP d’OC offers lots of upfront black fruit, touches  
of oak, and a complexity not associated with such an inexpensive wine  
- $10.00
