RED BORDEAUX

CHEESE & PÂTÉ PLATES
As a change this week we are offering a pâté plate in addition to our  
usual cheese plate.

Our cheese plate is all cow’s milk cheese as I think they are the  
best matches for Bordeaux:
Beaufort                                             Cow’s  
Milk               Savoie, France
Similar to Gruyère, this cheese has the addition of a sharpness on  
the finish.
Gouda                                                Cow’s  
Milk               Holland
A mild cheese which complements many red wines.
Le Maréchal                                      Cow’s  
Milk               Switzerland
Often thought of as a French cheese, this cheese comes from the Vaud  
canton in French-speaking Switzerland.  It is produced by the Rapin  
Family Dairy in Granges-Marnaud.

For our pâté plate we offer a mix of Oregon and California produced  
products:
Country Pâté                                      Pork/Pork Liver/ 
Black Pepper/Champagne
Venison Pâté                                      Venison/Sun-dried  
Cherries/Hazelnuts
Rillettes Pâté                                      Pork Rillettes  
and Herbs
EITHER SAMPLER PLATE COST $4.00
2005 is looking to be a great Bordeaux vintage – all the minor  
Châteaux wines I’ve tasted are good, showing good fruit and great  
balance.  I’d love to be able to buy the yet-to-be-released  
Classified Growths, but the prices have gone way beyond the  
reasonable.  The basic flight this week will be all 2005, whereas the  
Premium Pour is an outstanding 2003.  I’m not including my usual  
detailed tasting notes as I want the wines to speak for themselves.

1. We start in the CÔTES de CASTILLON and the CHÂTEAU LA PIERRE LEVÉE  
2005.  This appellation is just to the east of ST.-ÉMILION and the  
wines have similar characteristics.  This wine is a blend of 80%  
MERLOT, 15% CABERNET FRANC and 5% CABERNET SAUVIGNON - $11.50

2. Now to the MÉDOC and a CABERNET SAUVIGNON-based wine.  The CHÂTEAU  
MOULIN ROMPU is about 50:50 CABERNET and MERLOT - $13.50
3. We stay in the MÉDOC to taste the cru bourgeois CHÂTEAU DES  
GRANGES d’OR.  The vineyard is planted 50:50 CABERNET SAUVIGNON and  
MERLOT, but the London Daily Telegraph Wine Club which picked this  
wine as the best bargain 2005, describes it as a CABERNET SAUVIGNON- 
based wine which would infer there was more CS than anything else -  
$16.00

4. CHÂTEAU PUY ST. GEORGES is in the satellite appellation of ST.- 
ÉMILION called ST. GEORGES ST. ÉMILION.  Typical of the area the wine  
is predominantly MERLOT with some CABERNET FRANC and a touch of  
CABERNET SAUVIGNON - $20.00

For a Premium Pour we offer a 2003 as no 2005 “big guns” have yet  
been released:

CHÂTEAU ST. GEORGES CÔTE PAVIE is a ST. ÉMILION GRAND CRU CLASSÉ and  
is next door to the famous, and very expensive, CHÂTEAU PAVIE.  This  
2003 is one lush, big mouthful with good balance and length.  It is  
mainly MERLOT with some CABERNET FRANC - $49.50

information is based on verbal information from distributors, and  
actual wine prices will depend on the price invoiced at delivery to  
Cornell Wine Company.

Free tasting

As usual we will have a couple of wines open for free tasting.

As the weather looks like being somewhat warm, we will pour,  
provisionally, the CHÂTEAU THIEULEY 2005 CLAIRET which is a BORDEAUX  
ROSÉ from a blend of MERLOT and CABERNET SAUVIGNON - $13.50

Last week’s tasting was SPAIN other than RIOJA, so this week we will  
offer a RIOJA!  The ARBANTA 2005 is 100% organically-grown  
TEMPRANILLO and the wine was fermented and aged in stainless steel -  
$10.00
