CABERNET SAUVIGNON PÂTÉ PLATES
This week, to go with our big red wines, we offer pâté plates instead
of cheese.
Pheasant with Persimmon
Rabbit with Mustard
Pork/Pork Liver/Black Pepper/Champagne
The first two pâtés are made by Viande Meats and Sausage (City Market
NW).
PÂTÉ SAMPLER PLATE $5.00
This week we have decided to show Cabernet Sauvignons from around the
world.
1. We had originally selected a low-end California wine as our first
wine until we came across this gem from AUSTRALIA. Most of you know
I do not like “critter” labels or “cutesy” labels, so please ignore
the label on this wine! Koala bears are very cute – and Pauline and
I have been lucky enough to see some “in the wild” in Australia – but
we do not associate them with quality wine! However the GUM BEAR
2003 CABERNET SAUVIGNON is dynamite wine for its price. The fruit
comes from COONAWARRA that, for Australia, is a “cool climate”
region, and the wine is not “over-the-top” as are many Aussie wines.
With its pure cassis fruit, this is a wine to sip or go with many
meat dishes - $8.00
2. We now go south to CHILE and the MAIPO VALLEY. VIÑA PEÑALOLÉN is
a new producer for me, but the 2005 CABERNET SAUVIGNON was awarded 90
points in the Wine Spectator in the Smart Buys column. The wine is
dark and fleshy, showing blackberry, cassis and touches of coffee and
cocoa. The Wine Spectator said “A rock-solid expression of Maipo
Cabernet that shows the quality of the vintage. Drink now through
2009” - $16.50
3. Our next move is to CALIFORNIA and SONOMA VALLEY. The CABERNETS
from this region tend to be a little less intense than wines from the
NAPA VALLEY which makes them much more food-friendly. The MOON
MOUNTAIN 2005 offers lots of cassis, modest oak, and some spice on a
long finish. This is lovely Cabernet for a modest price - $16.00
4. We go south again to ARGENTINA and CATENA wines. We have done
very well with their MALBECS, and the 2004 CABERNET SAUVIGNON from
MENDOZA is just as good. It is a wine with lots of juicy cassis and
blackberry fruit that is made more complex by spice and cocoa notes.
This wine also received 90 points from the Wine Spectator - $21.00
TRY THESE FOUR WINES FOR $10.00
For this week’s PREMIUM POUR we offer another wine from CALIFORNIA,
but this time from the NAPA VALLEY:
SELTZNER VINEYARDS are in the STAG’S LEAP DISTRICT and have some of
the oldest Cabernet plantings in the region. Their 2004 ESTATE
CABERNET SAUVIGNON is a blend of 87% CABERNET SAUVIGNON, 6.5%
CABERNET FRANC and 6.5% MERLOT. Aged for 20 months in French Oak,
the wine has a core of rich, supple currant and black cherry fruit.
The Wine Spectator gave it 90 points and said it was “…complex,
balanced and well proportioned. Nice range of flavors that are deep,
persistent, pure and engaging” – $36.00

As usual, we will have a couple of interesting wines open including:
DOMAINE de BÉRANE 2005 LES AGAPES is from FRANCE’S CÔTES du VENTOUX
which is in PROVENCE but is usually considered a SOUTHERN RHÔNE
appellation – the red wines are very similar to CÔTES du RHÔNEs.
This wine, a blend of 70% GRENACHE, 25% SYRAH and 5% MOURVÈDRE, is a
dead-ringer for a deep-flavored CDR, but at a lower cost than most
similar quality CDRs - $13.50
