We are continuing our BEAUJOLAIS SALE – buy any three bottles of in-
stock wines and receive a 15% discount. This applies to Nouveau,
Beaujolais, Beaujolais-Villages and the five Beaujolais Crus we have
in stock, and also to our Beaujolais Blanc. We have sold-out of two
wines, so buy at these prices before it is too late. Of the Crus we
still have SAINT AMOUR, FLEURIE, CHENAS and two different MORGONS
available.

CHEESE PLATES
This week we rely on our favorite Manhattan web site to find out what
cheese is supposed to go with Champagne.
Appenzeller Cow’s
Milk Switzerland
During production this cheese is bathed several times in a mixture of
herbs, liquor and wine. This process gives a mild cheese an
intriguing herbaceous, but at the same time, nutty flavor profile.
Garroxta Goat
Milk Spain
This is produced in the Catalonia region in northern Spain. The
flavor is milky and delicate with a hint of nuttiness and a clean,
smooth finish.
Chaource Cow’s
Milk France
This cheese has been made since the early 14th century in the small
town of Chaource, in the Champagne region. Chaource smells slightly
of mushrooms with a rich, fruity and creamy flavor. It is good to
eat at any stage of maturation. When young, Chaource is very smooth.
When aged, the cheese is creamy. When fully matured, Chaource is
nutty and a little bit salty.
All these cheeses are available at Whole Paycheck.
CHEESE SAMPLER PLATE $5.00
1. I had several choices for our least expensive bubbly, and it was
hard to choose which to pour. One on the list was AUSTRALIA'S
JACOB’S CREEK CHARDONNAY PINOT NOIR BRUT CUVÉE. Last Sunday Matt
Kramer passed his holy water over this wine, so the choice became
easy. Actually, we used this wine three years ago and it was a big
hit. This sparkling wine is made entirely from Chardonnay and Pinot
Noir, fermented with the classic French Champagne in-this-bottle
technique. Kramer’s description was:
“Jacob's Creek Chardonnay Pinot Noir Brut Cuvée has a lovely, toasty
chardonnay scent with some definite red berry notes from the pinot
noir. The balance is excellent, with just the amount of refreshing
acidity you want in a sparkling wine. The finish or aftertaste is
soft and a bit on the sweet side (never mind the term "brut" which
implies dry). But nobody will object to this slightly sweet finish --
quite the opposite in fact.” - $9.50
2. Now we move to ITALY and the PROSECCO grape. Bubblies from this
grape can be in various styles from soft/sweetish to bone-dry Bruts.
The VALDO CUVÉE di BOJ BRUT, PROSECCO di VALDOBBIADENE is just about
the best Prosecco we have had in the shop – if you prefer the Brut
style. I would drink this in place of some Champagnes costing much
more - $18.00
3. Next up is GLORIA FERRER SONOMA BRUT. Year-in, year-out, this is
a big seller and is a regular 90-point wine in several magazines.
The Wine Spectator said “a delicious mouthful of bubbly. Smooth,
rich and creamy, with layers of black cherry, vanillan, ginger and
hints of lemon drop”. James Laube said “The best alternative to
Champagne with an attractive price” - $16.50
4. Our final wine of the basic flight is real CHAMPAGNE! THIERRY
TRIOLET is a small grower-producer in the village of BRETON in the
CÔTEAUX du SÉZANNAIS. This is a lesser-known area of the CHAMPAGNE
region, and hence his NV BRUT is wonderful value. It is a blend of
80% CHARDONNAY and 20% PINOT NOIR - $30.00
TRY THESE FOUR WINES FOR $10.00
For this week’s PREMIUM POUR we offer a stellar “GROWER-CHAMPAGNE”
The AUBRY FILS in the village of JOUY-les-REIMS on the MONTAGNE de
REIMS grow PINOT NOIR, PINOR MEUNIER and CHARDONNAY. They are also
experimenting with old, but still approved grapes such as ARBANNE and
PETIT MESLIER. At the moment they are just using these grapes for
still wines. Their NV BRUT is all PREMIER CRU fruit and is a blend
of 60% PINOT MEUNIER, 20% PINIOT Noir and 20% CHARDONNAY. With 80%
black grapes, one would expect a “big” Champagne. While no wimp,
this bubbly has elegance and balance, together with a very long
finish. At a trade tasting it out-shone some more expensive vintage
Champagnes - $42.50

ZENAS is a relatively new Oregon winery and on Saturday their wine
maker will be here pouring some of their wines. He has not confirmed
which, but this is the provisional list:
2005 RIESLING, MONTINORE VINEYARD - $18.50
2005 CABERNET FRANC, DEL RIO VINEYARD - $24.50
2005 CLARET, WHITE HORSE BLEND, DEL RIO VINEYARD - $31.50
ON SATURDAY WE WILL BE OFFERING A 15% DISCOUNT ON THESE WINES (stock
and pre-paid orders).
