THIS WEEK’S CHEESE SAMPLER PLATE
This week I relied on my favorite New York web site for
recommendations for cheese with Champagne. With one slight
modification (thanks to Whole Foods), the cheese is from those
recommendations.
Garrotxa
Goat Spain
Pont l’Eveque
Cow France
Mt. Townsend Creamery Seastack Cow
Washington State
I wanted to find Chaource from France, but Whole Foods said it is
only available at limited times during the year. They said this
cheese from Washington is a great “knock-off” of Chaource.
SAMPLER PLATE $4.00
SPARKLING WINE
1. We start in LIMOUX where they claim they invented the secondary
fermentation in the bottle before Dom Perignon. Unfortunately at
first they did not know how to disgorge the wine off the lees so
their wines were “cloudy”. DOMAINE COLLIN CUVÉE PRESTIGE is our
favorite from the area. The wine is a mix of the local grape MAUZAC
together with CHARDONNAY and PINOT NOIR - $12.00
2. France’s Loire Valley is the home of many inexpensive sparkling
wines. MARQUIS de la TOUR ROSÉ is a lovely PINOT NOIR based wine that
offers great value (we also have the BRUT which is 100% CHENIN BLANC)
- $9.00
3. We now go to BURGUNDY and CHATEAU de SASSANGY CRÉMANT de
BOURGOGNE The wine is made from biodynamically grown grapes and is
a blend of PINOT NOIR, GAMAY NOIR, CHARDONNAY and ALIGOTÉ. This is
a poor man’s CHAMPAGNE! - $20.00
4. No sparkling wine event would be complete without real CHAMPAGNE,
and we offer FRANK BONVILLE NV BLANC de BLANC. This wine is 100%
CHARDONNAY from 100% GRAND GRU vineyards in the village of AVIZE from
a small grower-producer. In the past I was not a great fan of Blanc
de Blanc, but I tasted this and was converted - $33.00

For this week’s PREMIUM POUR we offer:
ANDRÉ CLOUET NV BRUT NATURE. This producer makes some of the best
value Champagnes. This wine is 100% PINOT NOIR from GRAND CRU
vineyards in BOUZY. Matt Kramer, who is not a great fan of
Champagne, raved about this wine. Sometimes I do not agree with
Matt, but I’m with him on this wine - $39.0
(we also have what I think is the best NV ROSÉ CHAMPAGNE in the
world, the ANDRÉ CLOUET. Ethereal wine at real world prices - $43.00)
